Lemon Coconut Protein Bites Recipe

These no-bake bites are the perfect afternoon pick-me-up. Naturally sweetened with dates and filled with fiber and protein, whip up a batch for a quick, energizing pre- or post-workout snack. Nutritionist approved!

 

INGREDIENTS:

-1 c almonds (or ½ c almonds & ½ cup walnuts)

-1 c medjool dates, pitted

-1 serving of vanilla Pure Whey protein powder

-juice from 1 lemon (2 T)

-1/3 c unsweetened shredded coconut

-3 T Maca powder

-1 T coconut oil

 

DIRECTIONS:

-Place almonds and protein powder in a food processor and process until a powder forms.

-Add dates and lemon juice, and process until dough forms.

-Roll into balls, then roll each into the shredded coconut.

-For a firmer consistency, store balls in an airtight container in the fridge.
