Lemon coconut protein bites

These no-bake bites are the perfect afternoon pick-me-up. Naturally sweetened with dates and filled with fiber and protein, whip up a batch for a quick, energizing pre-or post-workout snack. Nutritionist approved!

Lemon Coconut Protein Bites

Ingredients

  • 1 c almonds (or ½ c almonds & ½ cup walnuts)
  • 1 c Medjool dates, pitted
  • 1 serving of vanilla Pure Whey protein powder
  • juice from 1 lemon (2 T)
  • 1/3 c unsweetened shredded coconut
  • 3 T Maca powder
  • 1 T coconut oil

Directions

  1. Place almonds and protein powder in a food processor and process until a powder forms.
  2. Add dates and lemon juice, and process until dough forms.
  3. Roll into balls, then roll each into the shredded coconut.
  4. For a firmer consistency, store balls in an airtight container in the fridge.
