Lemon Coconut Protein Bites
Ingredients
- 1 c almonds (or ½ c almonds & ½ cup walnuts)
- 1 c Medjool dates, pitted
- 1 serving of vanilla Pure Whey protein powder
- juice from 1 lemon (2 T)
- 1/3 c unsweetened shredded coconut
- 3 T Maca powder
- 1 T coconut oil
Directions
- Place almonds and protein powder in a food processor and process until a powder forms.
- Add dates and lemon juice, and process until dough forms.
- Roll into balls, then roll each into the shredded coconut.
- For a firmer consistency, store balls in an airtight container in the fridge.
